The yellows, rusts, blues and greens that dance around the walls and tables convincingly conjure the landscape of the nation's southwest. The menu at the 12-year-old café is similarly zany and bold in its sweep. Standard Tex-Mex ingredients –– burritos, enchiladas, guacamole, and salsas –– are paired with fresh vegetables, a range of chile peppers, fish, chicken, steak, and smoothly sophisticated sauces for a cuisine all its own. (There's nothing arid about this desert-influenced fare. Portions are large and entrees come festooned with brushy herbal accents.) Coyote Café delivers a howling good meal in vibrant surroundings.
